Mr. Swift was a stickler for quality. He opened a butcher shop in 1855 and began a lifelong search for the best beef. This search led him to the American mid-west, where he personally hand-selected the best corn-fed cattle because they produced the most tender, best tasting beef. Everything he did was dedicated to producing the best quality beef.
